Budget Friendly Long Weekend Activities

As proud Canadians we love to celebrate our country and what better way than with a fun filled long weekend. Life gets expensive quickly but there’s no reason your fun should take a backseat, here are some of the ways we’ll enjoying our summer weekends at a low cost: Backyard BBQ’s – whether one person cooks or we do a potluck, it’s an inexpensive way to hang out, enjoy the weather, and have some great food Local festival – Ribfest is a Canada day tradition; lots of festivals have free admission Bike rides – find a local trail or even around your own area. Many places rent bikes, some cities even offer a bike share program Fireworks – watch fireworks at a park Get active at a community centre – play some tennis, go swimming, or rent a book Work on a Puzzle – we love puzzles in our house, they’re great to work on alone or with a group of people Beach – visit a beach for the day. Recipe: Overnight Oats

Breakfast is the most important meal and it’s one of my first thoughts every morning. We know getting out the door on time isn’t an easy task, so Overnight Oats are a perfect solution to a healthy breakfast on the go. Taking under five minutes to prepare the night before, you’ll have more time to glam with Your Personal Beauty Expert or catch up on the news. Overnight Oats: Base Ingredients 1/3 cup oats 1/3 – ½ cup milk or non-dairy substitute 1/3 cup yogurt (any kind) 1 tbsp chia seeds 1/3 cup of fresh fruit Pinch of Salt Pinch of cinnamon   Directions: Combine all base ingredients in a bowl, jar, or container to sit overnight in the fridge. In the morning top with nuts/nut butters, spreads, seeds, fruit, or enjoy as is. The possibilities are endless! May long weekend is the official start of gardening season! If you have yet to Plan the Ultimate Weekend Getaway and find yourself at home gardening we have some tips to make your garden the envy of your neighbourhood. Determine the amount of space you’ll want to dedicate to your garden. Take into account as plants grow they will cover more square footage. Set a budget and amount of time to dedicate to maintaining your outdoor space. Planting can become a large commitment both financially and time wise, start off with a few plants then continually add more. Inspect soil – noting sunlight, and accessibility to water. Each plant flourishes in different soil compositions, to make the most of your garden pick up a soil testing kit at a local hardware or plant nursery to check soil nutrients. Depending on the space you’ve selected be mindful if it has access to sunlight and rain. This will save you from continually watering your plants even when it rains. Take photos to capture before and afters. Remember it will only become better in time. Don’t forget proper tools! Make a check list of everything you’ll need, helps to make shopping an ease and spend more time gardening. Select plants to compliment your current landscaping and suit your lifestyle. Don’t despair – a weekend getaway is the perfect solution to relax, renew, and recover from those crazy work weeks. Grab a drink, message your girls, and keep reading because we have the ultimate planning guide for your weekend getaway. First up for consideration is budget. Knowing your budget is critical to creating a stress free break. No one wants to worry about money on a trip. Don’t forget to factor into the budget spending money for food, shopping, admission fees, cabs, buses, and tips. Travelling in groups for a weekend can bring people together. Try to choose friends who get along – it will avoid any unnecessary drama. Pick travel dates and select a destination. For weekend getaways opt for a closer destination to minimize travel time and maximize the fun. Some of our favourite local travel spots include: Ottawa, Montreal, Camping at Bruce Peninsula, Cottage rentals in Huntsville or Kawarthas, Vineyard tours in Niagara, and Blue Mountain in Collingwood. So now with the location, dates, and people to travel with decided; next up create bucket lists for: “must-see”, “must-eat”, and “must-experience”. Ask each person to provide ideas and ensure at least one item from everyone’s list is included. This will help ensure everyone can experience something they wanted and helps maintain group harmony. Recipe: Lemon Ricotta Pancakes

In celebration of Mother’s Day we’re bringing you an easy recipe from Fraiche Nutrition for Lemon Ricotta Pancakes.   Ingredients: 3 tbsp. melted butter 2 c. flour (can substitute gluten-free flour) ¼ c. sugar 2 ½ tsp. baking powder ½ tsp. baking soda ½ tsp. salt 2 ½ c. buttermilk 2 large eggs 1 tsp. vanilla 1 tsp. grated lemon rind 1/2 cup ricotta cheese 2 tsp. fresh lemon juice Directions: Melt the butter in a saucepan or microwave and cool. In a large bowl, mix together all of the dry ingredients In a separate bowl, beat the eggs with a fork and add the buttermilk, vanilla, lemon rind, ricotta cheese, lemon juice and cooled melted butter Add the wet ingredients to the dry ingredients and stir just until mixed: do not over mix! It will still look lumpy. Heat a griddle or pan with a small amount of vegetable oil on medium heat, pour into pancake shapes of your choice, and flip when the bubbles appear on the top and the bottom is golden brown.
